Pumpkin Streusel Muffins

I love these Super soft pumpkin muffins! They’re packed full of flavor and topped with a crumbly, buttery streusel topping.

These come together pretty quickly, especially if you have the streusel made ahead of time. I like to keep a container of streusel in the fridge so that I can make these on the fly all season long!

I do recommend making your own pumpkin purée, if possible. It’s easy, has a better flavor and texture, and is a great way to use those decorative autumn squash.

Super soft pumpkin muffins packed full of flavor and topped with a crumbly, buttery streusel topping.

Ingredients
  • 1½ cups pumpkin purée
  • ½ cup avocado oil
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 tablespoon vanilla
  • 1½ cup kamut or all purpose flour
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • FOR THE STREUSEL:
  • ½ cup kamut or all purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons butter, cold
Instructions
  1. Preheat the oven to 375°F.
  2. Line a muffin tin with cupcake liners.
  3. Place the pumpkin purée oil, brown sugar, eggs, and vanilla in a large mixing bowl and whisk together until smooth.
  4. In another bowl add the flour, pumpkin pie spice, baking powder, and salt. Whisk to combine.
  5. Add the dry ingredients to the wet ingredients and whisk together until a thick batter forms.
  6. Scoop the batter into the lined muffin tins, filling each well ¾ of the way full.
  7. For the streusel: In a small mixing bowl, add the flour, white sugar, brown sugar, Cinnamon, and salt, and stir together.
  8. Cut the cold butter into cubes and cut into the flour mixture with a pastry cutter until the butter pieces are the size of a small peas.
  9. Sprinkle 1 tablespoon of streusel topping over each filled muffin well.
  10. Bake in the preheated oven for 10-12 minutes, or until puffed and firm on top.
  11. Remove from oven and let cool slightly before enjoying. Store in an airtight container.
