Cut the top and bottom off of the pineapple. Cut the skin of the sides. Cut the pineapple into cubes(including the core - the core is full of Bromelian!). Place the pineapple cubes in a high speed blender.
Cut the peaches in half and remove the pits. Add them to the blender along with the lemon juice, maple syrup, vanilla, and 2 cups of the water. Blend on high speed for one minute, or until completely liquefied and smooth. Pour into a pitcher and stir in the remaining 2 cups of water. Taste and add more maple syrup if more sweetness is desired.
Pour over ice and serve!
